Skinny Whipped Cream Made At Home With Nitrous Oxide

One of the advantages of making whipped cream in a whipping siphon is that we can modify it in many ways to produce the desired results. This blog tells you how to create Skinny Whipped Cream, which uses gelatin to yield thickness and stability without fat from heavy cream. 

Now, you might be thinking: Skinny Whipped Cream? Yes, whipped cream is already thin, but it can be lighter. Surprise!

Getting it thinner is possible by using some specific ingredients, among which ‘xanthan gum’ is the most special. Gelatin and a little of xantham help hold a foam without introducing any extra fat because it’s a colorless and tasteless additive.

Where to get Xantham Gum

The bacterium called Xanthomonas campestris secretes the polysaccharide xanthan gum, which you can find in the baking section of a grocery store and on e-commerce sites as well. Just 0.5% to 1% of this gum can thicken solutions and offer the required stability and thickness when fat from heavy cream is missing. One tablespoon of xanthan gum contains around 7 grams of fiber.

And as a result of the gluten-free trend, xanthan gum is now more readily available to customers. With xanthan gum, you can make fruit purees thicker without heating them.

What ingredients do I need to make Skinny Whipped Cream?

To prepare skinny whipped cream, you will need a cream dispenser, vanilla extract, and unsweetened almond milk with a bit of gum stabilizer, xantham, 1/4 of a teaspoon to be more precise. Once gathered, mix all the ingredients in a container before pouring the liquid into your whipping siphon. This tool will help you get the desired amount of whipped cream.

Advice: adding such a small amount of xantham can be a challenge; we recommend you find a good scale not to use more than indicated.

Nitrous oxide will help you get your skinny whipped cream.


A cream siphon 

2 N2O cartridges


1.5 cup of almond milk 

1/2 tablespoon vanilla extract

1/4-1/2 tablespoon xantham gum


  1. Place the almond milk, vanilla extract, and gum in a bowl and mix well with a whip.
  2. Add the milk to the siphon. Allow standing for a minute.
  3. Charge the siphon with two N2O cartridges.
  4. Turn the canister upside down and spray what you’d like into a bowl. It is common for a little liquid to come out first before the consistency is more like whipped cream.
  5. Enjoy!

Your skinny whipped cream can be teamed up with fresh fruits, and berries will be a safe bet.

To make it sweeter, you can add an extra ½ tsp of sugar to your dispenser. What you prepare in your whipping siphon can be stored in the refrigerator for one week.

Lastly, skinny whipped cream looks great atop a cup of coffee. You figure out what coffee you like and start decorating with your mixture!

Finally, if you regularly make whipped cream in your cream siphon, it will be better to replace those small and disposable cartridges with something like FAST GAS which will save you time, effort, and money.
