  • For the whipped cream, we recommend you use powdered sugar preferably. Confectioner’s sugar is preferred to granulated sugar because the small amount of cornstarch in the former discourages the weeping that occurs when whipped cream stands for longer than a few hours.   • Before mixing ingredients, we suggest you cool your utensils, including the heavy cream. Chill them for about 20 minutes in the fridge. The mixture won’t whip appropriately and get that fluffy texture if the cream is not cold enough. 

Step-by-Step to Making Homemade Whipped Cream

  1. If you decide to use Agar-Agar, start by dissolving the one tablespoon indicated into warm water at medium-high heat. Set this mix in the microwave for 20 seconds or simmer until it thickens considerably. Some preparations require it to boil for about five to seven minutes. 
  2. Take the utensils chilled in the fridge and prepare the quantities listed above. Take into account that these quantities are for a single batch. You might need to reconsider them if you need to create more significant amounts of whipped cream.
  3. Mix the heavy whipping cream with the Agar-Agar and beat until it thickens. Do not look for peak creation in this part; you want to give your cream some structure.

  2. In a tall measuring cup, combine the yolk and egg and add the hot ingredients, constantly mixing—season to taste with salt and pepper. Small tip: Spice up the hollandaise sauce with lime or chili to your taste!
  3. Pour the sauce into a 0.5 L cream siphon, screw on your N2O cartridge and shake approximately 16 times. 
  4. Place your siphon upside down and make sure it points directly to the plate you want to top up.

If used later, you can keep the sauce warm in a bain-marie for up to four hours at a maximum of 75°C.

#3 Patty’s Rum Cream Coffee Topping

  • 1 cup of heavy whipping cream (with at least 35% fat content) 
  • Three tablespoons rum
  • Three tablespoons of Kahlúa coffee liqueur 
  • Three tablespoons of powdered sugar (or as per your taste)

  1. Boil the water and add coffee powder. 
  2. Mix the contents well and add 5g of sugar, stirring continuously.
  3. Remove the mix of coffee brew from the heat and let it chill entirely.
  4. Mix 15 g of the sugar together with the heavy cream.
  5. Pour the cream mixture into a cream dispenser and charge it once. 
  6. Shake the cream dispenser well and chill in the fridge for 60 minutes.
  7. Mix the remaining sugar with the milk until it has fully dissolved. 
  8. Cool the milk mixture in the refrigerator until needed. 
  9. To serve, add the sweet milk into a glass filled with ice. Pour the coffee brew mixture onto the milk and briefly stir. Help yourself with a long spoon. 
  10. Release the whipped cream onto the milk and stir all ingredients in the glass.
  11. To finish, top it off with a final squirt of whipped cream.

  • 1 cup of heavy whipping cream (at least 35% butterfat content)
  • One teaspoon of instant Coffee
  • Five tablespoons of instant cocoa
